Creator Nicole Bandklayder shared the story behind The Cookie Cups, a bakery that sells gourmet cookies in the shape of mini cupcakes:

This photo is actually really funny because it’s so honest. When we did this photo shoot, we were all watching the photographer working on something else and all of a sudden we noticed that this little girl had snuck away to eat the Cookie Cups! She actually started taking a bite of each one and putting them back on the plate like we wouldn’t notice.

The product was really just a genius mistake that happened when I wanted to make chocolate chip cookies but didn't have the right oven pan. I had a mini cupcake pan and decided to put the cookie dough in that way and just see what happened. Out came The Cookie Cups, our version of the cookie, reinvented! We began creating several flavors in our test kitchen including our favorite, Hazelnut Swirl, and we plan to expand our flavor palette in the coming months.

The biggest challenge we face as a business is shipping. I know overcoming shipping challenges is not an easy feat, but there are only so many things we can control at the end of the day. We can’t control the post office taking longer than expected or losing a package. We can, however, control when it goes out and how well it is packaged. Regardless of any shipping issues, we do our best to make our customers happy.

Something interesting about our product is that the packaging is actually based on an egg carton. After months of research and product development, we found that packaging was the most innovative, and it seems to fit our Cookie Cups perfectly!
